I am brewing a 3 demijohn batch of pumpkin wine. It has reached 11% alcohol with a specific gravity of 1010, so I thought that is good enough so racked them off and gave each demi a crushed tablet, and waited for them to start clearing. Three days later and the yeast is fermenting as strong as ever.
