What is Flaked Barley?

Flaked barley is produced by steaming whole barley grains and then rolling them between two rollers to create flat flakes. This process gelatinizes the starches in the barley, making them more accessible to enzymes during the brewing process.

No Flaked Barley is not malted, therfore is does not contain any enzymes to convert the starch. Flaked grains are steamed and then crushed by 2 rollers that are hot to create the flakes.

One of the benefits of using flaked barley in homebrewing is its ability to improve mouthfeel and body in beer. Flaked barley contains beta-glucans, which are soluble fibers that contribute to a thicker and creamier mouthfeel. This is particularly useful in beer styles such as stouts and porters, where a creamy, full-bodied mouthfeel is desired.

Another advantage of using flaked barley in homebrewing is its ability to improve head retention. The proteins in flaked barley help to stabilize the foam on top of the beer, creating a thick, creamy head that lasts longer. In addition to its contributions to mouthfeel and head retention, flaked barley can also add a subtle sweetness and nuttiness to beer. This can be particularly useful in beer styles such as cream ales and blonde ales, where a light, refreshing flavour profile is desired.

When using flaked barley in homebrewing, it is important to take into account its high protein content. Flaked barley contains roughly 11-12% protein, which can lead to haze in the finished beer if not properly managed. To prevent haze, it is recommended to use a protein rest during the mash or to add a fining agent during fermentation. Overall, flaked barley is a versatile and valuable ingredient in homebrewing.

Its ability to improve mouthfeel, head retention, and flavour make it a popular choice among brewers of all levels of experience. Whether you are brewing a rich and complex stout or a light and refreshing cream ale, flaked barley can help take your beer to the next level.
