Brewer's Caramel is a dark brown liquid obtained by controlled heat treatment of sugars (saccharose or glucose) using certain additives (ammonium hyrdroxide). Caramels are used to provide colour in beer, cider and non-alcoholic malted beverages.
Ideal for making colour adjustments of medium colour intensity.
6ml of Brewer's Caramel per hectolitre will give an increase in colour of 2 EBC
Overall character of the beer remains unchanged
Relatively low viscosity leads to ease of handling and more readily diluted in process.
The product is a blend of nutrients and trace elements formulated to correct deficiencies in wort.
Brewer's Caramel contributes to the character of beer, providing colour and consistency in beer. Caramel is the world’s most widely consumed colouring ingredient in foods and beverages.
Brewer's Caramel is stable in brewing applications as it is a positively charged colloidal solution (positive caramel). When under the correct storage conditions.
Brewer's Caramel has excellent microbiological stability as CARAMEL TMF is manufactured under very high temperatures making it essentially sterile therefore will not promote bacterial growth.
Brewer's Caramel can be added in a number of places; at wort boiling stage in the Kettle; or to the fermentation vessel. If used to adjust the colour of your final product CARAMEL TMF can be added to the conditioning tank.
Rates of Use
To determine the correct rate of use it is advised that rates of Brewer's Caramel should be determined based on the results of optimisation trials.
An addition of 6ml per hectolitre will give an increase in colour of 2 EBC.
