Finings are substances added during or after fermentation to bind with suspended particles and help them settle. These particles may include yeast, proteins, tannins, or pectin's.
• Colloidal haze: Most common in wine and beer, caused by charged particles.
• Fining agents: Work by neutralizing these charges, allowing particles to drop out of suspension.
