Dry Beer Enzyme / Amylase

Aids to ferment a beer dry by converting the unfermentable to fermentables.

Amylase enzymes play a crucial role in brewing, especially when it comes to breaking down starches in beer malt. Let’s dive into the details:

  1. What Is Amylase?

    • Amylase is an enzyme that breaks down starch and complex carbohydrates into simpler sugars like maltose and glucose.
    • In brewing, amylase converts starch in malted barley into fermentable sugars, providing more food for yeast and resulting in higher alcohol content.
  2. Types of Amylase:

    • Alpha-amylase: Breaks internal bonds between glucose molecules in starch, creating a range of intermediate sizes.
    • Beta-amylase: Further digests these intermediate molecules into maltose (a sugar of two glucose units) and glucose itself.
    • Glucoamylase: Similar to beta-amylase, it also works on starch breakdown.
  3. Mashing Process:

    • During mashing, brewers aim for a temperature range of 66°C to 70°C (150°F to 158°F) to allow amylase enzymes to work effectively.
    • Alpha-amylase starts the process by breaking down starch into smaller units.
    • Beta-amylase then converts these units into maltose and glucose.
  4. Optimal Timing:

    • Add amylase immediately after adding strike water or about 30 minutes into an extended all-grain mash.
    • Avoid higher temperatures, as amylase is destroyed by heat.
    • Hold the mash at its activation temperature for an hour to allow full conversion of starch.
